The curious allure of Watermelon.

I have never met a fruit with a better publicist than watermelon.

Harry Styles crooned "Watermelon Sugar." It played a supporting role in "Dirty Dancing." Jolly Ranchers built a business on its flavor. It is every August barbecue's most dependable centerpiece, arriving on a paper plate needing no introduction, the pink flesh getting all the attention.

And still, we spit out the seeds.

We tend to assume a valuable ingredient must sound exotic or come from a mountain, a spring, or a monastery nobody's heard of. We confuse scarcity with usefulness. Familiar ingredients have the opposite problem — we think we already know them, so we don’t look deeper. The rarest thing in beauty right now might just be an ingredient you've actually heard of.

I've learned that the least theatrical ingredient is often doing some of the most vital work.
